2015 Domaine Pattes Loup 1er Cru Chablis Vaillons
We've just got a tiny allocation of an amazing Chablis, new to NZ from Domaine Pattes Loup. Pattes Loup means the 'wolf paw' and is run by 30-something Thomas Pico who established the domaine in 2015 when he inherited 2.5ha of family land, converted it to organics and has since grown to 15ha including some premier cru sites. Lettie Teague of the Wall Street Journal describes the wines thus:
"one of these new superstars, Thomas Pico of Domaine Pattes Loup, hand-harvests all of his grapes and ferments his wines in oak, concrete and stainless steel tanks, depending on the particular wine... But the style is consistent throughout: Pattes Loup wines are dense and richly textured and yet seemingly weightless in that way on-chablis is can be. Another word for this is transparent. In fact, transparency is key to all great Chablis, and the term is involved almost as often as acidity... In a very short time Mr Pico became a bit of a cult figure and his wines are hard to find."
