Gatti Bolle Bandite
This is one of the most exciting wines we have seen in a very long time and one we have worked closely with Richard Klein of Artigiano Imports to get into New Zealand. Carolina Gatti is one of a growing number of modern-thinking producers in the uber-commercial Prosecco DOCG. It's called Bolle Bandite which means banned bubbles because the process she uses is technically not allowed. It combines the finesse of methode wines with the vibrancy of Pet Nats. The grapes are organic and Carolina makes a wine and ages it for 3 years before back-blending it with frozen juice from the same vintage, it is also Col Fundo or undisgorged giving it added complexity and depth.
